How to make gougeres

Updated: Feb 24, 2021

One of my biggest addictions is gougeres (or as my sister calls them, cheesy poofs). Learn how to make this highly addictive snack and wow all your friends!

Here are the ingredients you will need:

1/2 cup water

4 tablespoons unsalted butter

2 pinches granulated sugar

1 pinch Kosher salt

1/2 cup flour

2 large eggs

1 teaspoon Dijon mustard

1/2 cup grated cheese (or other ingredients such as herbs, zest, etc.)

As for the mustard, there is only one kind of mustard that is allowed in my house: Maille. We even went to Dijon on our Europe trip in part to go to their flagship store! Even if your local store doesn't carry it (though you might be surprised), Amazon is once again to the rescue. This 4 pack is their 4 most popular flavors:

And if you're wondering why my piping bag is bright orange, it is Fat Daddio's brand. It is the only piping set I own. The bag is virtually indestructible (it will even hold molten sugar), and the tips have a rim around them to prevent bag burst. I have had this set for years and it is still going strong.
