Chef Ro's Cooking Camp: Muffins

Here are the ingredients you will need:
2 cups all-purpose flour
1/2 cup granulated sugar
1 tablespoon baking powder
1/2 teaspoon cinnamon, allspice, or other spices (for strong spices such as cloves, ginger, or nutmeg you will want to cut this in half)
1/4 teaspoon Kosher salt
1/4 cup brown sugar
1 stick (8 tablespoons) unsalted butter, melted and cooled
2 large eggs, room temperature
3/4 cup whole milk
1/4 teaspoon vanilla extract or paste
Zest of 1 lemon
1 cup of fruit of your choice, diced small if necessary
