Chef Ro's Cooking Camp: Mac and Cheese

Learn how to cook bacon mac and cheese with Chef Ro in the latest installment of Chef Ro's Cooking Camp.
Here are the ingredients you will need:
4 ounces bacon, cut in 1/4" pieces
4 1/2 cups shredded cheese of your choice (will taste better if at least 1 cup is creamy like
brie, blue cheese, or goat cheese (or even cream cheese), or you may want to reduce the
cheese by 1/2 cup if you don't have a creamy cheese)
1/2 cup grated parmesan cheese, divided
Butter or neutral oil, if needed (or if you don't want to use bacon)
1/4 cup all-purpose flour
1/2 teaspoon freshly grated nutmeg
4 cups whole milk
1 3/4 cups panko breadcrumbs
1 pound pasta (I like shells)
Kosher salt and freshly ground black pepper, as needed
