Chef Ro's Cooking Camp: Granola

In this video, I show kids how to make their very own customize-able granola. Here is the recipe:
1/2 cup neutral flavored oil (canola, vegetable, etc.) or coconut oil
1/2 cup honey (agave, maple syrup, brown sugar, etc. may be substituted)
1/2 teaspoon vanilla extract or paste
1/2 teaspoon ground cinnamon
1/4 teaspoon each nutmeg and ground ginger (optional)
3 cups oats (not instant or quick-cooking)
1 cup mixed seeds and nuts of your choice
1 cup mixed dried fruit and/or coconut flakes
Preheat oven to 300°F and line a baking sheet with parchment paper or a silpat.
Whisk together the oil, honey, cinnamon, vanilla, and nutmeg and/or ginger, if using, in a medium bowl. Add the oats and nuts/seeds and stir to coat. Stir to coat well.
Spread the oat mixture onto the prepared baking sheet. Bake for 20 minutes, stirring halfway through. Remove from oven and add dried fruit/coconut mixture. Stir, then press back into the pan and return to oven. Cook for an additional 5-10 minutes, or until golden-brown and the nuts and seeds have toasted. Remove from the oven and cool. Enjoy!
If you don't have a silpat, I cannot recommend them enough. They are basically reusable parchment paper that absolutely nothing will stick to. They are inexpensive, especially when you consider how much parchment you throw away!
